Strawberry White Chocolate Cookies

These cookies are probably one of my favorite cookies. That says a lot too, because cookies are probably one of my favorite treats EVER and I have had a lot of cookies! Between Rudy and I we could do some serious damage if we have a platter of cookies in front of us!

I love dried cherries and white chocolate together, but I wanted a different flavor with a bit of different texture then “chewy” so I came up with this delicious cookie using freeze dried strawberries. These are a must try! This cookie is crispy on the edges, moist on the inside, a tiny bit tart from the freeze dried strawberries, then sweet and creamy from the white chocolate. This in my opinion, is a perfect cookie.

Freeze dried strawberries are what you find in Kellogg’s Special K cereal. I suppose if you can’t find a package of freeze dried strawberries you could pick them out of your morning breakfast! Yes, these cookies are worth strawberry picking through your cereal, but if you don’t have the patience to do so, you could just use the regular dried strawberries. (You know, the chewy kind) But, you should be able to find the freeze dried fruit in your local grocery store, or try a gourmet food shop. Find them, make them!

This would be a great new cookie to try for Valentines!

Once you have the cookie batter mixed thoroughly, fold in the white chocolate and dried strawberries. Doing this by hand will prevent the freeze dried strawberries from crushing.

Bake the cookies just until the edges are turning golden brown. Don’t over bake!

Strawberry White Chocolate Cookies

1 1/2 cups Unbleached all purpose flour
1/2 teaspoon baking soda
1/8 teaspoon salt
1/2 cup unsalted butter, softened
1/2 cup packed brown sugar
1/2 cup granulated sugar
1 large egg
1 teaspoon vanilla
1 cup white chocolate chips
1 1/2 cups freeze dried strawberries

Preheat oven to 350 degrees.
Line baking sheet with parchment or a silicone baking mat.

In a small bowl, whisk flour, baking soda, and salt together; set aside.

In a large bowl, cream together butter, brown & granulated sugars, and vanilla until smooth.

Beat in egg.

Stir flour mixture into sugar mixture.

Mix in the white chocolate chips and strawberries by hand. (Try not to crush the dried strawberries, be gentle)

Using a cookie scoop or teaspoon portion dough onto prepared baking sheet. Place each cookie 2 inches apart. Give them room the spread!

Bake at 350 degrees for 8 to 10 minutes.

      Thanks! You can get the freeze dried strawberries at Trader Joes, Plum Market, Whole Foods and Meijers. I was just at Trader Joes and also bought freeze dried raspberries and blueberries. I can’t wait to use them. They are so intense with flavor!

    I made these and they are delicious! I was at the end of my supply of freeze dried strawberries, so the cookies didn’t spread quite as much as usual ( as there was more strawberry dust than pieces). I had to squish the cookies down before baking, and then they were perfect. I couldn’t get them out of the oven fast enough!
